Thank you for your recent freedom of information request sent to us by e-mail dated 17 November 2011.
For ease of reference I have copied your questions below
1 I would like a copy or details of the Christmas Day menu for every prison last Christmas (2010), including a list of which prison had which menu.

3. The same as both 1 and 2 for Hogmanay.
Enclosed at Appendix B are copies of specific Hogmanay menus from the prisons which vary from the normal menu
4. The same as both 1 and 2 for Burns Day.

5. The same as 1 for Easter Sunday (e.g. do they get a crème egg).
Enclosed at Appendix D are copies of specific Easter Day menus from the prisons which vary from the normal menu. In response to your specific question regarding a crème egg, none of the prisons included a crème egg on the menu.
6. The same as 1 for the Royal Wedding (e.g. one prison in London had ‘Royal Wills and Kate marble cake and custard').

7. I would like to know any information regarding colour codes or keys on menus - such as a key for low, medium and high fat foods, or a colour code for vegetarian/vegan eaters etc).
Red - food items with a red colour code should be selected occasionally or as a treat a these foods contain higher levels of either salt, sugar or fat.
Amber - Food items with an amber colour should be selected regularly, as these foods contain moderate levels of either salt, sugar and fat.
Green - Food items with a gren colour coding should be selected as often as possible, if you wish to follow a healthier life style. These food items contain less salt, sugar and fat.
White - Nutritional analysis is not yet complete for all the food items on the menu therefore, some items may not have a colour code allocated alongside them. Your catering team will be more than willing to discuss these options with you.

V - Vegetarian
8. I would also like to know the cost of an average prisoner's food per day, for the last five years (2007, 2008,2009,2010,2011), at each of the prisons separately, as well as an average for all Scots prisons.

The table provides the breakdown of food costs by establishment by year
9. And the cost of a prisoner's food and drink for the day on each of the days specified in 1, 2,3,4,5, and 6.
This information is not available as the SPS does not record the expenditure on a daily basis, therefore the costs associated with those dates as requested in questions 1-6 is not available. The additional costs relating to providing appropriate menus on those days is covered from within the existing foods costs of the establishment, or from the Common Good Fund (CGF). The CGF is a fund operated on behalf of prisoners by the establishment to provide funding that will not be covered from normal SPS funds. The CGF funding is made up of donations from external sources and any profit generated from the Prisoner's Canteen.
If you are dissatisfied with this response, you have the right to request a review. Your request should be made within 40 working days of the date of receipt of this letter, and we will reply within 20 working days of receiving your request. Under section 20(3)(c)(ii) of the Act your request should outline your reason for seeking a review. If you remain unsatisfied following an internal review, you then have the right to make a formal complaint to the Scottish Information Commissioner.
